This will be a deposit to reserve a spot for a quarter or half steer when they are ready to be processed. Dates change regularly so please contact with questions. Remainder of the cost, plus processing will be due prior to picking up your meat.

A quarter of beef can vary in size quite a bit depending on the animal bit usually average around 200lb hanging weight and processing is usually around 0.80/lb hanging, that fee goes right to the butcher, while the price for hanging weight goes to us prior to pick up from the butcher.  Take home weight depends on what type of cuts you choose and how much is bone-less.  Typically around 65% of the hanging weight. So for 200lbs of hanging weight you would see about 130lb meat.  That would include steaks, roasts (some people prefer to have less roasts and more ground beef or stew meat) and ground beef, which they can also process into summer sausage, jerky, hot sticks, burger patties, etc.
